Why steaks on the griddle
The girls and I have really come to enjoy top sirloin steaks. Especially, because I can find them on sale and it is such a versatile cut of beef for cooking and flavoring. Additionally, cooking on the griddle is convenient for a family meal or a big get-together. The griddle gets everything done beautifully and clean-up is a breeze. Here is why cooking steaks on a griddle can help with your next meal:
- Quick cook – The steaks cook up in under 5 minutes. I like this because they are the last item to cook for our meal or get-together.
- Space to cook a bunch – Cooking steaks on a griddle allows me to easily do more than 4. The top sirloin can also be flavored differently with a dry rub to a wet marinade to please everyone. Check out our wet marinade in the Smoked Sirloin Tip Roast.
- Perfect crust – The high heat from the griddle is ideal for causing the Maillard reaction on the steaks. The fast sear from the high temperature locks the moisture in and gives the perfect crust.
- Sides are done and waiting – Okay, this is another reason why I love cooking steaks on a griddle. I can do camp toast, potato slices, or my favorites with steak Caramelized Mushrooms & Caramelized Onions.
- Easy clean up – I get Sean to do it…thanks hubby! No, seriously it is a breeze. Once everything is done just simply scrap the griddle clean and re-oil.
Sweet lemon pepper dry rub
The Kitchen Bucket List’s sweet lemon pepper dry rub brings the wow factor to these perfectly seared top sirloin steaks. It has just 5 ingredients. Brown sugar is the base for the sweetness and adds a bit of caramelization during the sear. The minced garlic and onion powder add to the sweetness and bring that savory flavor as well. Lemon pepper is the driving flavor for the dry rub. I use the onion salt for a light salty flavor, sweetness, and for the dry brining.
Let’s get cooking steaks on a griddle
How to cook steaks on a griddle is all about simplicity, from the 5-ingredient dry rub to just under 5 minutes of searing for a nicely tender steak.
1. Preparing Top Sirloin: Cooking the steaks is actually quite quick and easy. The only thing that takes a bit of time is the dry brining.
2. Searing: Preheat the griddle then set it to high. A key thing to remember when cooking steaks on a griddle is the griddle needs to be smoking hot for the fast sear on each side.
3. Rest: With this fast sear method, you will need to let the steaks rest.

Equipment
An outdoor griddle is what I used. A good BBQ spatula makes flipping the top sirloin steaks easier. To ensure you get the doneness you want use an instant read thermometer.

How to cook steaks on a griddle
Equipment
- Outdoor griddle
- Instant read thermometer
- BBQ spatula
- BBQ tongs
Ingredients
- 4 top sirloin steaks (Approximately 8 oz, each)
- 1 tablespoon brown sugar
- 1 teaspoon lemon pepper
- 1 teaspoon minced garlic
- 1 teaspoon onion powder
- 1 teaspoon onion salt
Instructions
Preparing Top Sirloin
- In a bowl combine the 5 spices to make the sweet lemon pepper dry rub and set aside.
- Unpack the top sirloin steaks and place them on a tray to apply the dry rub.
- Rub the steaks with the sweet lemon pepper dry rub and place back in the refrigerator uncovered.
- Dry brine the top sirloin steaks for 4 hours.
Searing
- Time to get griddling, bring the steaks out and let them warm up on the counter while getting the griddle ready, about 30 minutes.
- Preheat and prepare the griddle, then increase to high, around 500 degrees F.
- Once the top sirloin steaks and griddle are ready, it is time to sear. Cooking steaks on a griddle is the fast part, just 2 minutes on each side for medium rare to medium. NOTE: Don’t flip the steaks back on the same spot, offset.
- Check the internal temperature of the steak for your level of doneness and pull them. Remember that the steaks will continue to cook while resting. NOTE: Ours showed between 124 – 130 degrees F. when they were pulled.
Rest
- Time for a bit of patience, it is only a 5-minute rest before you can enjoy beautifully seared top sirloin steaks. HINT: Perfect time to clean off the griddle.

Notes
- Steak’s doneness. For this recipe, I wanted medium rare to medium. I prefer my medium rare between 125 – 135 degrees F. and medium above 135 – 145 degrees F. If you prefer a different doneness, just adjust the internal temperature to your liking.
- A 36-inch outdoor griddle was used for the recipe.
