In a bowl combine the 5 spices to make the sweet lemon pepper dry rub and set aside.
Unpack the top sirloin steaks and place them on a tray to apply the dry rub.
Rub the steaks with the sweet lemon pepper dry rub and place back in the refrigerator uncovered.
Dry brine the top sirloin steaks for 4 hours.
Searing
Time to get griddling, bring the steaks out and let them warm up on the counter while getting the griddle ready, about 30 minutes.
Preheat and prepare the griddle, then increase to high, around 500 degrees F.
Once the top sirloin steaks and griddle are ready, it is time to sear. Cooking steaks on a griddle is the fast part, just 2 minutes on each side for medium rare to medium. NOTE: Don’t flip the steaks back on the same spot, offset.
Check the internal temperature of the steak for your level of doneness and pull them. Remember that the steaks will continue to cook while resting. NOTE: Ours showed between 124 - 130 degrees F. when they were pulled.
Rest
Time for a bit of patience, it is only a 5-minute rest before you can enjoy beautifully seared top sirloin steaks. HINT: Perfect time to clean off the griddle.

Notes
Steak's doneness. For this recipe, I wanted medium rare to medium. I prefer my medium rare between 125 – 135 degrees F. and medium above 135 - 145 degrees F. If you prefer a different doneness, just adjust the internal temperature to your liking.
A 36-inch outdoor griddle was used for the recipe.
