    Easy Lemon and blueberries cookies

    These lemon and blueberry cookies are super simple and easy to make. It only requires 6 ingredients. But this isn’t your regular cookie. This cookie is light, refreshing, and of course tasty!

    Lemon & Blueberry Cookies are a refreshing change

    They are perfectly fluffy, not too sweet, and so satisfying. These lemon and blueberry cookies are my summer cookies. I love cookies and make them all the time, but these are just what you need when you want an airy and refreshing cookie or just a change.     Interesting facts on lemon and blueberries

    Some of you are pretty anxious to start baking so I’ll make these fun facts short and sweet. First, let’s talk about the lemon, the British Navy used this fruit to prevent scurvy, back in the 18th century. A disease caused by not eating enough fruits and vegetables with vitamin C. Now, let’s take a look at the blueberries. I learned have over 500 types, now that is a lot of blueberries! Blueberries are also high in vitamin C but during the 18th century, the Colonist would mix the berries with milk to make gray paint.

    Why we love Lemon and Blueberry cookies

    This recipe will be an absolute delight to both young and old. The lemon cake base with the blueberries is a delightful fresh combination. The lemon flavor brings freshness and the blueberry because they are fresh gives you get the perfect pop of flavor. I find these cookies get even better a day later, not that they will last that long. This recipe is perfect and everyone can make them or help making them. This recipe is:

    • Simple: All there is to do is mixing, cooling, and baking.
    • Easy: There are only 6 ingredients. Total win.
    • Tasty: When you taste one of these cookies you don’t get the sugar rush. Instead, you get the refreshing taste of the lemon and the wonderful flavor of the blueberry.

    Ingredients you will need for these Lemon and Blueberry cookies

    • ½ cup (1 stick) salted butter, softened
    • 8 oz (1 cup) soften cream cheese, room temperature
    • 2 eggs
    • 1/3 cup vegetable oil
    • 1 (15.25 oz) lemon cake mix box
    • ¾ cup fresh blueberries

    SUBSTITUTION:

    • Blueberries can be substituted with another kind of fruit, nut, or chocolate
    Ingredients for cookies

    Directions:

    1. Preheat oven to 350 degrees Fahrenheit.
    2. Line a baking sheet with parchment paper.
    3. Next clean your blueberries and gently dry them with a paper towel.
    4. In a mixer beat the butter and cream cheese for 1 minute or until all is combined.
    5. Next add in the eggs and oil. Mix for 3-4 minute on high speed until the mixture becomes a yellow batter. If the egg yolk is not mixing well just use a spatula and break it up.
    6. Finally add in the cake mix. Mix for 2-3 minutes or until all is incorporated.
    7. Add the blueberries to the mixture and gently fold it in.
    8. Place the mixture in the fridge for 30 minutes.
    9. Use a medium-size cookie scoop and scooped the dough into balls and place 6-9 balls in the prepared baking sheet.
    10. Bake the cookies for 15 minutes or until the cookies have a golden edge.
    11. You should have 4-5 batches.
    12. Once the cookies are baked place them on a cooling rack and let them cool off for 5-10 minutes.
    13. Serve and Enjoy!

    Baker notes:

    I had some extra dough at the end so I got curious how they will turn out in the air fryer. Wow, I was surprised. The cookie had a fluffier texture and just a hint of a crispy edge. So win-win, oven or air fryer and you get two different textures and fabulous cookies.

    Let the cookies cool off completely before putting them in an air tight container. Store at room temperature for 1 to 2 days and in the fridge for up to 5 days.

    • Cookie Sheet: USA Pan
    • Cookie Scoop: Oxo medium
    • Stand-Up Mixer: Bosch Universal
    • Mixing Bowls: Anchor and Hockings glassware

    Skills:

    • These cookies can be cooked in the air fryer at 300 degrees Fahrenheit for 9 minutes on the manual setting. I use the Cosori air fryer, 5.8 qt. So the temperature and baking time might be different for other types.

    You can bake these cookies in the air fryer at 300℉ for 9 minutes. Remember that temperature and baking time might be different from brand to brand, so check your cookies once or twice while air frying.
