We love sandwich cookies and I’m excited to share with you our Chocolate and Marshmallow Sandwiches. It has the perfect combination of flavor and texture to make it a favorite for the whole family.

These chocolate and marshmallow sandwich cookies are a dream come true for everyone. The chocolate cookies taste light and are perfect to be eaten alone. Putting them together and make a sandwich with marshmallow in the middle and funfetti on top makes the Best Sandwich Cookie Ever! The cookie mixture is simple, the middle is marshmallow fluff, and it’s topped off with melted chocolate and funfetti. Hello, ooey-gooey sweetness. Win WIN for everyone!!!
This recipe is the perfect example of why I love using a “cookie scoop”. The scoop gives you the perfect-sized cookies and anyone can lend a hand. Not a problem for me when it’s cookie-making time.

Our air fryer obsession just got more intense. I knew with the summer heat here in Florida, I’d have to find a way to have my sweet treats without heating up the kitchen. For this recipe, I did make them in both to give you more options, but the results are in for us. The air fryer will be our choice for cookies this summer. If you have always wanted to up your cookie-making game this is a great first step. The melted chocolate on top is simple and helps the funfetti to stick. Now knowing I can make all types of cookies in the air fryer, we are back in the kitchen creating and will share more with everyone.

Ingredients you need to make these sandwich cookies
For the cookies
- 1 1/2 cup of unbleached all-purpose flour
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup unsweetened cacao powder
- 3/4 cup salted butter room temperature
- 1 cup raw sugar
- 3 tablespoons sour cream
- 1 teaspoon vanilla extract
- 2 eggs
For the toppings
- 1/2 cup chopped cooking chocolate, melted
- Funfetti
- 1/2 cup marshmallow creme (Fluff)
How to make the cookie sandwich
- In a mixing bowl, whisk together the flour, baking soda, salt, and cacao powder. Set aside.
- In another mixing bowl, with a hand mixer cream the butter, sugar, sour cream, and vanilla together until they are all combined. Add the eggs, one at a time, mixing well in-between each.
- Pour half of the dry ingredient mixture into the wet and mix with the hand mixer. Gradually add the rest of the dry ingredients. Mix until well incorporated. Don’t over mix.
- With a medium-size cookie scoop, scoop the dough and make balls. Place them in your air fryer basket. They need to be spaced out so they won’t touch. I would strongly suggest using parchment paper as the dough is very sticky. You should get approximately 22 cookies to make 11 sandwiches.
- Cook in the air fryer for 8 minutes at 320 degrees F on a manual setting.
- Allow them to cool in the basket for 2 to 3 minutes then transfer to a cooling rack and cool completely.
- In the meantime, melt the chocolate in the microwave-safe bowl, about 2 minutes, mix every 15 seconds.
Assembly
- Once the cookies are completely cooled, dip the top half of the cookies (11) in the melted chocolate. Then add a sprinkle of funfetti on top. Repeat the process. Set aside until they harden. Living in Florida, I put mine in the fridge to accelerate the process.
- On the remaining cookies, spread some marshmallow fluff on the bottom, approximately 1 to 1 1/2 teaspoon, you can put more, but it will overflow.
- Top the marshmallow with the cookie that was dipped in chocolate and funfetti. Keep refrigerated until ready to serve.
