If your family loves cheesy quesadillas and bold, savory flavors, these Air Fryer Mississippi Ground Beef Quesadillas deserve a spot on your dinner menu.
The filling comes together with simple pantry ingredients like ranch seasoning, au jus gravy mix, butter, and chopped pepperoncini. They add plenty of flavor without making the recipe complicated. Then everything gets tucked inside flour tortillas with lots of melty cheese and air-fried until the outside is crisp and golden.
I usually reach for mozzarella because it complements the Mississippi seasoning so well. But it is great with whatever cheese you have in the fridge, like cheddar, Monterey Jack, Colby Jack, or a Mexican cheese blend. Sometimes I’ll even mix two cheeses for the best of both worlds.
I’ve made these more times than I can count on busy weeknights, and they’re one of those recipes everyone happily grabs straight from the air fryer. The tortillas get perfectly crispy, the cheese melts into the beef, and every bite has that buttery, tangy Mississippi flavor without waiting hours for a slow cooker.
From start to finish, dinner is on the table in about 20 minutes, making this one of my favorite ways to turn a pound of ground beef into something that feels a little different.

What are Mississippi flavors?

If you’ve heard of Mississippi Pot Roast but never made it, you might be wondering what all the hype is about. The flavor comes from a simple combination of ranch seasoning, au jus gravy mix, butter, and pepperoncini peppers. It might not sound like much, but together they create a rich, savory sauce with just a little tang from the pepperoncini. It’s the kind of flavor that keeps you coming back for another bite.
Mississippi Pot Roast is usually made with a chuck roast that’s cooked low and slow until it’s fall-apart tender. These air fryer quesadillas deliver all that buttery, tangy Mississippi flavor in about 20 minutes instead of hours.
That’s one of the reasons I love this recipe. You get all those buttery, savory flavors without needing hours in the slow cooker. Add a few ingredients, and you’ve got a fun twist on a classic Mississippi meal.
Ingredients for air fryer Mississippi quesadillas
These quesadillas use simple pantry staples, but a few ingredients do most of the heavy lifting. Here are a few notes before you start cooking.

- Ranch seasoning: A packet is all you need to give the beef that classic savory ranch flavor. Homemade works too if you have some on hand.
- Au jus gravy mix: This adds the rich, beefy flavor that makes Mississippi recipes so good.
- Pepperoncini: Trust me on these. They don’t make the quesadillas spicy. They simply add a little tang that brightens the filling and keeps it from tasting too heavy.
- Ground beef: I usually make these with 80/20 ground beef because it stays juicy without making the quesadillas greasy. Leaner beef works too, but can be a little drier, while fattier beef may leave extra grease in the filling. You can also swap in ground turkey or ground chicken if that’s what you have.
- Flour tortillas: Use tortillas that fit comfortably in your air fryer basket. If they’re a little too large, simply fold them to fit.
- Shredded cheese: Use a cheese that melts well, like mozzarella, Colby Jack, cheddar, or a Mexican blend. I usually shred my own because it’s fresher and melts more smoothly, but pre-shredded cheese works on busy nights.
How to make air fryer Mississippi ground beef quesadillas
- Cook the ground beef: Preheat a skillet over medium heat. Add the ground beef and crumble it into pieces. Cook until the ground beef is no longer pink and drain excess fat. Sprinkle the ranch seasoning, au jus gravy mix, add butter, and pepperoncini. Mix and cook for 3 – 5 minutes until the butter is melted and all ingredients are well blended.
Cook’s Tip: If you’re a fan of pepperoncini, don’t throw away the juice! Stir in 1 to 2 tablespoons for an extra pop of tangy flavor. - Assemble the air fryer Mississippi quesadillas: Lay a butter tortilla on a plate and add cheese, ground beef mixture, and more cheese. Close and place in the preheated air fryer.
- Air fry to perfection: Add toothpicks to hold the tortilla down and air fry at 360°F for 7 – 8 minutes.
- Serve & Enjoy!

📝 A Few Helpful Tips
- Drain excess grease from cooking the ground beef before adding the Mississippi seasoning.
- Make it leaner: Swap beef for ground turkey or chicken.
- Spicy twist: Add diced pepperoncini or a dash of hot sauce to the filling.
- Don’t overfill the tortillas: Less filling = crispier quesadillas.
- Make ahead: Cook the beef filling up to 2 days ahead and store in an airtight container in the refrigerator.
- Prefer the griddle: Our quesadillas on the griddle post shows how to get that perfect crispy sear with the same Mississippi filling.
What to serve with these quesadillas
Keep the sides simple so the buttery, tangy Mississippi flavor stays the star.
- For dipping: Sour cream, ranch, queso, fresh salsa, or guacamole.
- Easy sides: Waffle fries, tater tots, tortilla chips, Mexican street corn, or a simple green salad.
- Fresh toppings: Sliced jalapeños, chopped cilantro, green onions, diced tomatoes, shredded lettuce, or lime wedges.

Make-ahead tips, storage, and reheat
This recipe is great for meal prep. Cook the Mississippi ground beef filling up to 2 days ahead and keep it in an airtight container in the refrigerator. When you’re ready to eat, warm it in a skillet, fill the tortillas, and let the air fryer do the rest.
The cooked filling also freezes well for up to 2 months. Let it cool completely before storing it in freezer-safe bags or containers. Thaw it overnight in the refrigerator or use the microwave if you’re short on time.
If you have leftover quesadillas, reheat them in the air fryer at 350°F for 3 to 4 minutes to bring back the crispy tortilla. The microwave works too, but the tortillas won’t be quite as crisp.
FAQ
Yes, place the quesadillas on a cookie sheet and bake for 10 plus minutes at 375℉.
Yes, you can, and I have a basic recipe for you to follow for Ground Beef In Air Fryer, just don’t add that recipe’s seasoning.
Reheat in the air fryer at 350℉ for 3 – 4 minutes or until warm and crispy to your liking. The microwave works, but it softens the tortilla.
There’s no secret ingredient. Simply stir ranch seasoning, au jus gravy mix, butter, and pepperoncini into the cooked ground beef. As the butter melts, it coats the beef with that rich, savory flavor and a little tang that makes Mississippi recipes so irresistible.
The pepperoncini peppers add a mild tang that balances the richness of the dish. Without them, the filling can taste flat or overly salty. Don’t skip them.
For milder, use fewer pepperoncini. For spicier, add jalapenos or hot sauce to the beef.
