These Mississippi ground beef quesadillas are one of my favorite ways to use a pound of ground beef for a speedy dinner. The filling comes together quickly with a few pantry staples, and the air fryer gives the tortillas a crispy finish without much effort.
4pepperoncini(More if you want to add some chopped into the quesadillas.)
2cupsshredded mozzarella, divided(Or your favorite.)
6tablespoonsbutter, divided
4flour tortillas
Instructions
Preheat a skillet over medium heat. Add the ground beef.
Using a heat-proof utensil, break the ground beef into pieces and cook until it is no longer pink. Drain the excess grease.
Sprinkle the ranch seasoning, au jus gravy mix, 4 tablespoons butter, and pepperoncini.
Keep mixing while cooking until the butter is melted and both seasonings are blended with the meat.
Take one tortilla, with butter on both sides, and lay it flat on a plate.
Add approximately ¼ cup of shredded cheese on one half of the tortilla.
Add 4 - 6 tablespoons of the Mississippi ground beef over the cheese.*OPTIONAL* Add chopped pepperoncini on top to your liking.
Add 2 tablespoons of cheese on top of the Mississippi ground beef.
Fold the tortilla back on itself. It will look like you have half a circle.
Place 2 - 3 toothpicks on the tortilla. They will help to keep the tortilla down when it is in the air fryer.
Cook in the air fryer for 7 - 9 minutes at 360℉ or until the tortilla is golden to your liking.

80/20 ground beef gives the best flavor and balance for the meat to fat ratio.Pepperoncini are the key to that classic Mississippi taste. Don't skip them. The Mississippi ground beef can be made ahead of time and refrigerated for up to 2 days.Reheat leftovers in the air fryer at 350°F for 3 - 4 minutes.Use a toothpick to keep the quesadillas closed.
