Potato Bites grilled on the BBQ are flavorful and tender thanks to the foil packet. They are cooked in 30 minutes and each packet can be uniquely flavored ahead of time.
Why do you use foil?
We love the convenience of it. The foil packet seals the moisture in to combine all the spices giving the potatoes a buttery and savory taste. And don’t worry they still get crispy. Our seasoning ingredients are easily found in your cupboard. FYI, don’t skip the celery seed. It helps to combine the other spices and brings freshness. If needed, the packets can be individually flavored. Either way, have fun with the spices. Read below for how you can change the seasoning.

I first learned how to do these potatoes when I was a little Monster Scout. It was so easy to do over an open fire. The foil works for you in two ways. It allows the potatoes to cook evenly. And gives you the option to move the packet around the firepit grill so you can cook other items. Just keep an eye on them for doneness. Oh, they work great for breakfast too.

Substitutions
Here are some easy substitutions you can do to our seasoning.
- Dry parsley – with Italian seasoning.
- Minced garlic – with minced onion.
- Baby red and gold potatoes – with your favorite potatoes just diced them into 1-inch/bite size.
- Salt – with garlic salt, onion salt, celery salt, etc.
Variations
- Spicy – You can have them as spicy as you’d like by just adding chili pepper flakes, or mixing in some banana or jalapeño peppers into the foil packet.
- Deluxe – Add peppers, onions, and some cooked bacon pieces. Then once it is done cooking add your favorite cheese on top.
- Kid-friendly – I love it when the kids give me a hand when mixing the seasoning onto the potatoes. Let them choose how theirs will be flavored.

Easy just double up on the regular kind.
You can use non-stick cooking spray if you are concerned. For this recipe, we found the oil added to the potatoes was enough.
Absolutely. The key is the final temperature and your preferred level of doneness.
Storage & Reheat
- Refrigerator – You can keep the cooked potatoes in the fridge for up to 3 days. But they never make it past the next morning here.
- Reheat – The leftovers in the air fryer at 350 degrees F. manual setting for 4 – 5 minutes. The skillet is good too. Especially if you want to add them to scrambled eggs or even better an omelet.

Ingredients
- 7-8 cups baby red and golden potatoes (About 2 pounds of potatoes washed and cut and halved or quartered if the potatoes are bigger. Think bite-sized)
- ¼ cup olive oil
- ½ tablespoon dry parsley
- ½ tablespoon minced onion
- ½ teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon celery seed
- ¼ teaspoon ground pepper
- ¼ teaspoon ground thyme
Instructions
- Prepare your BBQ for direct heating.
- Heat your BBQ to 400 degrees F.
- In a large bowl, place the washed, dried, and cut potato bites.
- Pour the olive oil and mix to coat them.
- Add dry parsley and minced garlic.
- Add the salt, garlic powder, celery seeds, ground pepper, and thyme. Sprinkle evenly over the potato bites.
- Carefully mix so all are coated with the seasonings. Set aside.
- Cut 4 pieces of heavy-duty aluminum foil, about 10 inches wide.
- Add 1 ¾ cups to 2 cups of potato mixture on 1 sheet of aluminum foil.
- Fold the aluminum paper to form a pocket.
- Repeat steps 7 and 8 until you have used all potatoes.
- Place on the preheated BBQ grill.
- Cook for 20 minutes lid closed.
- At the 20-minute mark, check for doneness. This is a good time to see how the potatoes are doing depending on the size of your bites. NOTE: Be careful when opening the foil packet because of the steam.
- Now I check them every 5 minutes until the potato bites reach 205 degrees F. or by tenderness. It took us an additional 10 minutes. Keep in mind the time will vary with the size and kind of potatoes you are using.
