7-8cupsbaby red and golden potatoes(About 2 pounds of potatoes washed and cut and halved or quartered if the potatoes are bigger. Think bite-sized)
¼cupolive oil
½tablespoondry parsley
½tablespoonminced onion
½teaspoonsalt
1teaspoongarlic powder
1teaspooncelery seed
¼teaspoonground pepper
¼teaspoonground thyme
Instructions
Prepare your BBQ for direct heating.
Heat your BBQ to 400 degrees F.
In a large bowl, place the washed, dried, and cut potato bites.
Pour the olive oil and mix to coat them.
Add dry parsley and minced garlic.
Add the salt, garlic powder, celery seeds, ground pepper, and thyme. Sprinkle evenly over the potato bites.
Carefully mix so all are coated with the seasonings. Set aside.
Cut 4 pieces of heavy-duty aluminum foil, about 10 inches wide.
Add 1 ¾ cups to 2 cups of potato mixture on 1 sheet of aluminum foil.
Fold the aluminum paper to form a pocket.
Repeat steps 7 and 8 until you have used all potatoes.
Place on the preheated BBQ grill.
Cook for 20 minutes lid closed.
At the 20-minute mark, check for doneness. This is a good time to see how the potatoes are doing depending on the size of your bites. NOTE: Be careful when opening the foil packet because of the steam.
Now I check them every 5 minutes until the potato bites reach 205 degrees F. or by tenderness. It took us an additional 10 minutes. Keep in mind the time will vary with the size and kind of potatoes you are using.
