Delicious homemade chocolate and marshmallow sandwich cookies

Get ready for chocolate, marshmallow creme, and Funfetti. These sandwich cookies are a cookie lovers dream come true. The Kitchen Bucket List walks you through this fun and tasty recipe where even the little hands can help.
In a mixing bowl, whisk together the flour, baking soda, salt, and cacao powder. Set aside.
In another mixing bowl, with a hand mixer, cream the butter, sugar, sour cream, and vanilla together until they are all combined.
Add the eggs, one at a time, mixing well in between each addition.
Pour half of the dry ingredient mixture into the wet and mix until almost incorporated. Gradually add the rest of the dry ingredients. Mix well but don't overmix.
With a medium cookie scoop (1½ tablespoons), scoop the dough into balls. Place them in the air fryer basket. They need to be spaced out so they won't touch. I would strongly suggest using parchment paper as the dough is very sticky.
Air fry at 320℉ for 8 to 10 minutes.
Let them cool in the basket for 2 to 3 minutes then transfer them to a cooling rack to cool completely.
In the meantime, melt the chocolate in a microwave-safe bowl, mixing every 15 seconds. It will take approximately 2 minutes.
Assembly
Once the cookies are completely cooled, take 11 cookies (half of the cookies) and dip them in the melted chocolate. Then sprinkle with Funfetti, optional but delicious. Set aside to harden. If you live in a hot and humid environment you can place them in the refrigerator to accelerate the process.
On the remaining cookies, spread 1 to 1 ½ teaspoons of marshmallow creme on the flat side of the cookie.
Assemble the marshmallow sandwich cookies by pressing one half with marshmallow creme to the cookie with melted chocolate. Keep refrigerated until ready to serve.

Notes
If you want to bake the cookies in the oven, preheat your oven to 350℉. Line a cookie sheet with parchment paper and cook your cookies for 8 to 10 minutes or until the edges are set.Marshmallow creme: I used 1 to 1 ½ teaspoons per cookie. You can always add more, however, your marshmallow creme cookie may overflow.
