    Variations

    • Spicy – add chili pepper flakes or chili powder for a wow effect. That is why I use a bit of oil on the tortillas to allow seasonings to adhere.
    • Natural – don’t want to add oil, no problem. The trick here is to lightly oil the griddle like you would for any grilling. Then just put the tortilla down and let it warm up, about 1 minute or less. Now just flip it onto the other side and grill them to your liking.
    • Kid-friendly – This is a great simple recipe for them to help with, like brushing the oil on the tortillas before you take them out to the griddle.
    • Dessert – Maybe I should call this one kid-friendly. Add a thin layer of butter then sprinkle with cinnamon and sugar.

For a more buttery smooth texture to the corn tortillas add a thin layer of butter and a pinch of salt. Then place them on the griddle butter side up to soak in.

Can you just warm the tortillas up for fajitas?

Oh yes! It is even easier. Just warm up the griddle then turn it off. If you just cooked up your sides and meat, turn it off and let the temperature come down to below 300 degrees F. • Preheat the Blackstone to low for 5 minutes.
