It is so easy to do Scrambled Eggs on the Blackstone. The best is you can make a bunch and each to order, from meat lovers to veggie.
When we seasoned the Blackstone, eggs were the first thing we cooked to see how we did. They were so tasty and now the family only wants their eggs done on it. You get a wonderful texture and I find using “LOW” to one mark above lets me be able to cook various styles of eggs. It also makes it easier to add additional toppings to the scrambled eggs on the Blackstone. You are going to love the simplicity of being able to cook a full breakfast you thought only possible at a restaurant.

It’s easy. If you want fried eggs, like me, I do it after I have started the scrambled eggs. So, I can keep an eye on them as they cook to my taste. Now here is the fun part. You can finish them sunny side up by putting a lid over them or over easy.
Just start with your favorite breakfast meat and sides. The meats and hashbrowns cook at about the same time. Then just move them to the side and cook the scrambled eggs.
I add it before either way works.

Scrambled Eggs
This is a classic for breakfast on the griddle. We like doing them, Old-Fashioned, where you actually scramble the eggs once they are on the griddle. You can scramble them before if you prefer. It cooks the same way.
🧀 Cheesy Scrambled Eggs
These can be done in so many ways. It is all about the cheese you like. I used Colby Jack. Cheese brings a creaminess to your scrambled eggs on the Blackstone and of course its flavor.
🐖 Meat Lovers
If you are a breakfast meat lover, these scrambled eggs are for you. The whole cook can be done all together. You grill up the breakfast meat you want, put them to the side for your family/guests and dice some up for your eggs. That’s it. Just add them to the eggs with your favorite cheese as they finish on the griddle.
🍄 Veggie
These are so fresh and scrumptious. I sautéed onions and peppers for this recipe but you can put them in fresh. Also, any vegetables you like will be great, like mushrooms.
If you like your onions sweeter, let them sweat a bit before you add the peppers or other veggies.

💭 Substitutions
You can always use egg substitutes. Just keep an eye on the cooking as each product may cook differently.
📖 Variations
It’s scrambled eggs, so the variations are up to you and your imagination.
- Spicy – use some smoked Paprika or a spicier sausage, like chorizo. If you prefer it to be more veggie, jalapeno peppers are a great option.
- Everything– Add everything we did for this recipe into everything scrambled eggs on the Blackstone…Go ahead it will be so tasty.
- Kid-friendly – this is a great opportunity for the little hands to make some choices. Do they have a favorite cheese or spice that would go well in the eggs? Let them add it to their eggs.

Scrambled Eggs on the Blackstone
Equipment
- Blackstone Griddle (Griddle)
- Griddle Spatulas
- Serving Fork
- Bowls
Ingredients
- 8 eggs
- Salt & Pepper
- Olive oil
Optional Toppings:
- ½ cup Colby Jack cheese shredded (Your preference of cheese)
- 2 slices of bacon, 1 sausage link, and 1 sausage patty diced to liking
- ½ onion, ½ red pepper, and ½ yellow pepper diced (Sautéed)
Instructions
- Preheat the griddle on the "LOW" setting for 5 minutes.
- Crack your eggs for the scramble. This recipe is 8 eggs for four types of scrambled eggs.Tip: Add salt & pepper to taste.
- Prepare your optional toppings for the cheesy, meat lovers, and veggie scrambled eggs.
- Apply olive oil (or your preferred oil) to the griddle top, approximately 1 tablespoon. Be careful here as the oil will heat up rapidly. Coat the griddle.
- Turn off half the burners on one side.
- Ensure the area where you will be scrambling your eggs on the griddle, has an additional light coat of oil.
- Pour the eggs slowly onto the griddle to control their placement.Tip: Have a spatula handy here, for any escapees.
- Wait a moment to let the eggs set on the bottom. Then scramble the eggs with the serving fork.
Adding the Additional Toppings
- Once the eggs begin firming up a bit but are still uncooked, divided them into four portions.
- Add your toppings to each scrambled egg portion then mix them into the scrambled eggs. By the time you are done with the additions, the plain scramble should be done. You can move them to the side burners that are off.Tip: Have the additions in bowls to be able to add them to the eggs. If a portion is cooking faster than expected, move the scrambled eggs toward the front of the griddle. It is a bit cooler.
- Finish the cheesy, meat lovers, and veggie scrambled eggs to your taste. Shift them as necessary to the holding area until all are done.
- Serve and Enjoy!!!
Notes
♨️ Food safety
You will be working with eggs and possibly raw pork. So take appropriate safety precautions, like washing your hands and avoiding cross-contamination. USDA has more food safety information if you need it. Additionally, the Blackstone is a large hot surface and you will be using oil on it. Be careful as you add oil to the griddle. It heats up rapidly and can splatter when coating the griddle.
