    Easy Air Fryer Funfetti Cake

    Have you ever baked in an air fryer? It is so fun and quick. This funfetti cake is the proof of how simple, easy, and tasty air frying baking is. You can now have a cake done and ready to eat in under 1 hour. Best of all the kitchen will not have to get heated up

    Funfetti cakes are fun, let’s just be honest. And sometimes you just want to have some cake. This is why we decided to bake in the air fryer. It is the perfect size to make a four to six serving cake. 

    For the last few months, I have been cooking with the air fryer. Now we are baking and having so much fun. I love how quick and easy it is. Making a cake in the air fryer is the best of both worlds: the kitchen does not heat up and the sweet tooth is satisfied.

    Using funfetti when you bake makes everything better. Don’t you agree? Two layers of funfetti cake top it all. It is fun, tasty and so colorful. My crew here has a sweet tooth and loves having homemade treats. But let’s be honest, a double stack cake is a lot of cake. It is best shared for a birthday party or special occasion with guests.

    This is when I knew it was time to figure out how to make one of our favorite treats in the air fryer.

    Funfetti cake can now be part of your family’s dessert, by following this simple recipe.

    What do we need to make our funfetti cake?

    Ingredients:
    • 2 eggs
    • 3 tablespoons salted butter softened
    • ¾ cup granulated sugar
    • 3 tablespoons vegetable oil
    • 6 tablespoons cream
    • 1 teaspoon vanilla extract
    • 1 1/8 cup unbleached all-purpose flour
    • ½ tablespoon baking powder
    • ¼ teaspoon salt
    • 3 tablespoons sprinkles

    Let’s make our easy funfetti air fryer cake

    Directions:
    1. Line a 6-inch pan with parchment paper and butter the parchment and the side of the pan. Set aside.

    2. In a large mixing bowl, with a hand mixer,  mix together eggs, butter, and sugar until all ingredients are combine and creamy, about 2 minutes 

    3. Add cream, oil, and vanilla extract. Mix until all incorporated. You will have a smooth texture

    4. In a separate bowl, whisk together flour, baking powder, and salt. Add the sprinkles to the flour and mix until all sprinkles are coated.

    5. Slowly add the flour mixture to the egg mixture. Mix until all incorporated, you don’t see any more dry flour but do not over mix. I prefer to use a whisk or large spatula for this step so I don’t overmix.

    6. Pour half the mixture in a prepared 6-inch cake pan, keep the remaining in the fridge

    7. Cook in the Air Fryer on manual at 320 degrees F for 15 to 18 minutes or until the cake is nice and golden and when you insert a toothpick it comes out clean.

    8. Cool off for a few minutes, then transfer the pan to a cooling rack. Pull the parchment paper off.

    9. Cook your remaining batter.

    10. Let the cake cool completely before icing.

    11. Use your favorite vanilla buttercream to ice the cake once it cooled off.

    Baker’s notes

    When baking with funfetti, I always mix them in my flour before adding to the wet ingredients. I usually use the jimmy ones they keep more their color and really give a good effect on the final bake goods.

    All air fryers are different. Make sure to look at your cake as you cook. You may need to adjust time depending on your air fryer or the type of pan you use in the air fryer.

    Notes

    1. This batter makes enough for 2 cakes in a 6-inch pan. I only have one pan, but if you have 2 you can prepare both and keep the second one in the fridge until ready to bake.
    2. I would not suggest cooking both at the same time. I have noticed they bake more evenly when doing one at a time.
