In a large bowl, add the water, yeast, and granulated sugar. Gently mix and let it sit for 5 minutes until the yeast blooms.
In a separate bowl, whisk flour and salt together.
Once the yeast has bloomed, add half of the flour mixture to the yeast. Mix well.
Add the melted, cooled butter and brown sugar to the mixture. Mix to combine all ingredients.
Add the remaining flour. Mix to incorporate the flour. You may use a mixing spoon or a Danish dough whisk, but I found it much easier just to mix with my hand.
Once you have a dough ball, keep mixing for 3 - 4 minutes. Mix in the bowl or on a lightly floured surface.
Place the dough ball in a bowl, cover with plastic wrap, and let it rise for 60 - 90 minutes, or until it has doubled in size.
10 minutes before the dough is done rising, bring a large pot of water to a boil.
Preheat the oven to 425℉.
Once the dough has finished rising, divide it into 6 equal balls.
Roll each dough ball into a 20-inch rope.
Cut the ropes into 1 ½ to 2-inch pieces. Set aside.
Baking Soda Bath
Once the water is boiling, add 1 to 2 tablespoons of baking soda to the water.
Boil each dough bite for 30 - 45 seconds.
Place them on a cookie sheet, leaving some space in between each piece.*NOTE* You will need to do this in batches. I did 3 batches. I did not refrigerate the dough, but you can if your kitchen is too hot. Also, you can boil all your pretzel bites and place them on different cookie sheets, or wait to boil them until your first cookie sheet is ready to use again.
Baking and Coating
Bake the pretzel bites in the preheated oven for 12 - 14 minutes or until they are golden brown.
Cool on a cooling rack while you are baking the remaining pretzels.
Once all the pretzel bites are completely cooled, place them in a large mixing bowl.
Pour the melted butter over and mix to coat each bite.
Sprinkle half of the cinnamon sugar mixture and mix to coat each one.
